I made my first attempts at walking in Chinese cuisine, and I have to say that I did not manage to do that badly. I had ordered Chinese sauce from Amazon, namely Hoi-Sin Sauce. This allows you to prepare a delicious Chinese-tasting meal.
Ingredients are:
- 400g chicken smeared
- 3 onions
- 1 red pepper
- 250g brown mushrooms
- Calvados or Sherry
- Sugar
- Hoi-Sin Sauce
- Salt, pepper and flour
- Oil for frying
- Soy sauce
First, marinate the chicken smear with 2 tablespoons of calvados (or whatever else tastes high-percentage such as sherry or cognac), 2 tablespoons of hoi-sin sauce, a teaspoon of sugar and a teaspoon of flour. Then I added a shot of soy sauce, which suits everything Chinese. That's 30 minutes to stop now. Meanwhile, cut 3 onions, 1 pepper and 250g brown mushrooms into bite-sized pieces and salt and pepper them. Of course, you can also do this with the marinated meat.
Now you let oil in the wok get very hot and fry the meat well with constant stirring. If it is half brown and through, take it out and let the vegetables cook in the same way. This takes 3 – 5 minutes for both. When the vegetables are ready, take it out and make the sauce. You could have added 3 cloves of garlic to the vegetables, but I had also forgotten.
For the sauce I have now used twice the amount of the recipe. This gives you a lot of sauce at the beginning, which you then have to boil. So I took 200ml chicken broth, simply made from maggi and water. I added two teaspoons of hoi-sin sauce, sugar, salt and flour. With the flour you have to be careful and stir it gently, preferably with a whisk, because otherwise there are unsightly lumps. Then let the whole thing cook for a good while until it thickens. You can also add soy sauce to your sauce.
Now you can add chicken snabs and vegetables. The vegetables had a lot of juice with me, so next time I would consider throwing away a little bit.
